Tempeh Fajitas
Excellent party food, simple and quick to make.
Serves: 2
240 g Tempeh
1/2 Onion
1/2 Sweet red pepper
1 Carrot
3 Tbsp. Olive oil
2 tsp. Tamari soy sauce
Chipotle or other hot sauce
4 Tortillas
Juice of 1/2 lime
Cut the tempeh in half. Slice the tempeh, onion, red pepper and carrot into thin strips. Heat olive oil in a skillet at medium-high heat. Add the tempeh and vegetables and fry, stirring occasionally, until the tempeh is just lightly browned. Stir in tamari and the hot sauce, to taste. Cook about 2 more minutes while you warm the tortillas. Place the tempeh mixture on the tortillas, sprinkle with lime juice and serve.
